The Emilia Romagna region is renowned for its iconic Italian ingredients, such as parmesan cheese, balsamic vinegar, and Parma ham, making it the heart of Italy's culinary scene. Chef Michael Bonacini kicks off his regional feast with a flaky pie filled with savory pancetta, spinach, and Swiss chard. He then prepares a rich Bolognese sauce, a staple so well-loved in Italy that it's simply called 'sauce.' Next, Michael showcases balsamic vinegar by crafting succulent balsamic chicken, using the reduction as a dressing for grilled radicchio. To finish, he bakes a rich chocolate cake infused with spices and nuts known as Pampepato.
