In this episode, Luke hops on a train at Ga Thap Cham, where fresh fruit is loaded up like a bustling market, but he must move swiftly as the train won’t wait. Arriving in Nha Trang, famous for its rich marine life and stunning beaches, he goes hand-catching for his favorite seafood: sea urchins. Once back on land, Luke roams the streets and is drawn in by the strong aroma of durian, a potent tropical fruit. He samples 'banh can', a local dish cooked on small roadside burners. At Luong Son fish market, he anxiously awaits feedback from the locals on his chargrilled calamari. Finally, Luke explores a barramundi farm that also grows sea grapes, which inspires his final dish.
